I decided to make a cake for my friend Kevin’s birthday. I was flipping through cookbooks and looking online and I found the EASIEST cake recipe of all time. It also happens to be a vegan cake recipe. The frosting, not so much. The term “buttercream” makes that obvious, I think. But this cake was really really good and I got tons and tons of compliments and requests for the recipe so here it goes! Don’t forget to download the FREE printable recipe cards!
Spice Cake
Ingredients:
| 3 cups | All purpose flour | ½ tsp | Ground cloves AND Ground Nutmeg |
| 2 cups | Sugar | 2/3 cups | Canola Oil |
| 2 tsp | Baking Soda | 2 tblsp | White Vinegar |
| 1 tsp | Salt | 2 tsp | Vanilla Extract |
| 1 tsp | Cinnamon |
Directions:
In a large mixing bowl combine dry ingredients. In a separate bowl, combine water, oil, vinegar, and vanilla. Slowly add to dry ingredients and beat until smooth (batter will be thin)
Pour into a 13 in. x 9- in by 2- in baking pan coated with cooking spray. Bake at 350 degrees for 25 to 30 minutes. You could also pour into a round cake pan and cook for about 55 min.
Spiced Vanilla Buttercream Frosting
Ingredients:
| 1 | Stick of Butter (1/2 cup) softened | 1 ½ tsp | Vanilla |
| 4 ½ cups | Confectioner’s Sugar | 1/3 cup | Milk |
| 1 tsp | Cinnamon |
Directions:
In a large mixing bowl, cream butter until light and fluffy. Beat in sugar, vanilla and cinnamon. Add enough milk to achieve desired consistency
When you do start icing the cake, make sure that it is completely cooled. Otherwise it is going to look like how mine looks, which is like a pinterest recipe gone very bad. Another fun tip, if you dont have birthday candles (which you should!!) use matches and stick them in the cake for a fun little birthday surprise. Yes, that really happened.
